Salted caramel sauce


1 1/2 cups sugar
1/3 cup water
1 cup heavy cream
1/2 teaspoon vanilla extract
¼-½ tsp. salt

Mix sugar and water and put over low heat until the sugar is dissolved. Turn heat to high and let boil until a nice caramel color is achieved. Take off the heat and slowly add your cream (watch out for splattering, it bubbles up like crazy!) Return to heat and stir until all of the sugar is dissolved into the cream (about 2 minutes). Add your vanilla and salt and stir to combine. Let cool and store in an airtight container in the fridge.
I am seriously excited to have an entire jar of this sitting in my fridge now. You can put it in your coffee, or over ice cream, or with apples. Or you can just eat it by the spoonful. Ehhem. Not that I do that.
