Breakfast Pizza

I’m sorry if this picture makes this look less than appealing, but believe me, it tastes delicious! Breakfast pizza has become a new favorite in our house. It’s a little bit more work than regular pepperoni pizza, but I’ll throw in some shortcuts to make your work easier!

What You’ll Need:

Pizza crust (I like this recipe, but you can also use a roll of Pibsburry crescent rolls as your crust, or buy a pre-made crust)
A roll of sausage (I think it usually comes in 12-16 oz. roll)
2 cups of milk
2 tbsp of flour or cornstarch (I used cornstarch as a gluten free option, that way I could add the same toppings to my daughter’s GF crust)
5-6 eggs and 2-3 tablespoons of milk
8-12 oz. of cheddar cheese
Pre-cooked bacon crumbles (you can find them in the salad aisle)

Instructions:

Start by making your crust. If you follow the recipe I linked to above, you should take half of the dough (wrap the other half in oiled saran wrap and freeze it for later use), spread it out to the desired size and thickness on an oiled sheet pan, and then slather the crust with about a tablespoon of olive oil. This will keep the crust from getting dry and tough, and it will stay soft and chewy when you bake it.

Let the crust rise in a warm place. I like to preheat my oven to 150 and then turn it off, this allows for some super fast rising!

If you’re going with the Pillsbury crescent roll crust, unwrap your dough and lay it out flat on an oiled sheet pan. There’s usually some score marks in the dough for easy tearing, so try to squeeze the dough together to keep from having any breaks in it. Use a rolling pin to roll it flat.

Preheat your oven to 400 degrees. (Make sure you remove your crust first!)

Before you bake your crust, you need to start on the sausage gravy.

Cook your sausage in a pan, breaking it into fine pieces, until it’s cooked thoroughly.

Combine the cornstarch (or flour) with 2 cups of milk. Stir it until all the clumps are gone. Add this mixture to the sausage and let it come to a boil. Keep a watch on it and turn off the heat once it has thickened. Season with salt and pepper to taste. Set aside.

Put your crust into the pre-heated oven and let it bake for about 10 minutes.

While your crust is baking, beat 5-6 eggs with 2 tablespoons of milk. Scramble your eggs in a pan until they are the desired done-ness.

Once your crust is par-baked, take it out of the oven. Smother it in your sausage gravy. Sprinkle your scrambled eggs evenly over the gravy. Top with bacon crumbles and cheddar cheese.

Put the pizza back into the oven for an additional 10-15 minutes, or until the cheese is melted and the crust starts to brown.

This pizza is so incredibly good! I just wish I’d gotten a picture to do it justice. And the best part, you can eat it for breakfast OR dinner!
